Bienvenidos to my Blog!

Hello Family, Friends, and Curious Readers,

Thanks for stopping in to see what I am up to. This is my first blog, and I hope not to bore you too much with the details of my life. But rather hope to offer you some insights into development work, the highs, the lows, and well the boring.

But before I move away for 27 months, let me give you a little information about myself before I lose a steady internet connection.

So after graduating from Boston College in 2005, I decided I wanted to learn Spanish and "save the world" so I moved to Cusco, Peru. I began by volunteering for The Center for Traditional Textiles of Cusco by researching and writing a small business plan for the organization. I continued to work with the organization until February of 2008, when I returned to the US to prepare for my move to Madrid, Spain for 15 months to study an International MBA at IE Business School. And now, after a year of searching for the perfect development job, and taking odd jobs in the meantime, I have joined the Peace Corps and am volunteering again. So wish me luck, and PLEASE someone stop me from volunteering again!

BirthWeek Fun!

I know I haven't updated in a little while, and I apologize for that. Life has settled back into the routine of planning for classes, going to classes, working at my assigned NGO, house sitting for friends, and working on grant applications for funding on projects that I want to work on during my time here in Nicaragua. But this week is something special. I am going to turn 29 on Sunday and have decided to start celebrating early by turning my birthday into a birthweek! It all started last weekend with a celebration in Esteli with Yessica, Carlos, and our friend Stephanie. We went to MaxiPali (which is the Nicaraguan equivalent to Walmart (is actually owned by Walmart) and bought the fixins for my favorite meal: Spaghetti and Meat Sauce, Garlic Bread, Veggies and Dip, and Chocolate Cake with Chocolate Frosting.

It was SOOOO GOOD. Let's be honest, let's let the pictures speak for themselves. (P.S. for the rest of the week I am back on my diet haha.)

Striking a traditional Nicaraguan pose to be sexy for the camera. haha.

Along the same lines but with a satirical spin

Yessica working hard on the garlic bread!

Carlos and Gloria having mojitos while waiting for the food to be ready

Stephanie and I had matching outfits (and we didn't even coordinate that!)

Spaghetti!!!!!

The makings of a two layer cake!

You can only appreciate how amazing this cake is when you haven't seen or tasted anything like it in over a year!

Of course I had to spring for the skim milk!

Can you tell how excited I am???
To continue with the birthday celebrations, when back in Matagalpa, I went over to my friend's Tommy and Linda's house for dinner. We had red wine, brocoli, beans, brown rice, chicken, and for dessert, and friend of theirs brought cinnamon rolls! It was a great night, great conversation, and another wonderful way to celebrate my birthweek! Well, I hope you all are well and are making good choices (better than that GIANT piece of chocolate cake I had haha) I love you all, stay tuned for the rest of the birthweek fun!

  1. Happy Birthday Week from all your relatives in Dallas, they all say "hi". Glad to hear you are enjoying the week. The chocolate cake looks delicious, hope you savored every bite and then followed it up with an Insanity Workout. Sending lots of love your way.
